Crudo and Ortolana Piadina
WITH ORTOLANA SAUCE
It is the queen of Italian street food and loved by millions of people all over the world: we are talking about piadina, a poor recipe with ancient origins, which lends itself to being stuffed with any ingredient your imagination suggests.
From the most traditional to the most innovative combinations, the result will always be super tasy!
- 500 grams of flour 0
- 250 gr of water
- 80 gr of olive oil
- 1 teaspoon of baking soda
- 1 tablespoon of salt
- Raw ham
- Dried tomatoes
- Ortolana sauce
Preparation: 30 minutes
Doses for: 5 people
To prepare the homemade piadina, pour the water, olive oil, baking soda, salt into a bowl and start mixing.
Now add to the liquid part of dough the flour and mix all the ingredients. In a first phase mix everything in the bowl and then, when the dough becomes firmer, begin to knead on the work surface, until it forms a smooth and homogeneous dough.
Once you have reached the right consistency, let your dough rest for about 20 minutes, covered by the upside down bowl.
After the necessary time, lightly knead the dough, divide it into 5 pieces of about 170 grams each and form 5 balls. Then roll out the balls with a rolling pin to obtain round sheets with a thickness of 2-3 millimeters.
At this point, heat a non-stick pan on the fire for cooking your wraps.
When the pan is hot, start cooking the wraps one at a time.
During cooking, prick them on the surface with a fork. Cook the wraps for 2-3 minutes per side, checking the cooking from time to time.
For the filling let’s start by adding the mozzarella while the piadina is finishing cooking still in the pan.
Once the mozzarella has melted, remove the piadina from the pan and start stuffing it with dried tomatoes and the salad previously dressed with oil, salt and balsamic vinegar. Now add the raw ham and finally our Ortolana sauce!
(Small tip: to make everything even tastier, add a teaspoon of mayonnaise to the Ortolana sauce and mix it before spreading it in the piadina)
