Baked ribs and Figs Mustard

A tasty second course, that makes you forget about bon ton at the table, to be enjoyed with hands, down to the last piece of meat! Baked ribs will win you over with their softness and flavor. The extra touch, however, is given by the taste of the Figs Mostarda, a topping that will surprise even the lovers of the classic!


Ingredients
- 1 kg of pork ribs
- Mostarda of Figs
- 1 sprig of thyme
- 1 sprig of rosemary
- 1 clove of garlic
- 50 g of onion
- 10 black peppercorns
- 1 pinch of salt
- 500 ml of red wine
- EVO Oil

Preparation
Crush the garlic and put it in a resealable container together with all the aromatic herbs, a drop of extra virgin olive oil, pepper and onion. Add the meat in the same container mixing everything well and cover completely with the red wine.
Leave to marinate in the refrigerator for a few hours.
Once you have waited the necessary time, drain the meat from the marinade and place it on a lined baking sheet. Cook the ribs at a temperature of 200° C for about fifteen minutes.
Meanwhile, strain the liquid and the herbs obtained from the marinade, keeping only the liquid aside. Once 15 minutes have passed, remove the ribs from the oven and brush them with the marinating liquid.
After brushing, continue cooking the ribs in the oven for another 30 minutes, wetting two more times with the marinade.
When the ribs are well cooked, remove them from the oven and let them rest for a few minutes. At this point, portion them by cutting the meat between one bone and another.
