One way to make your guests speechless (and probably also to make you speechless) is to try this very special combination.

How many times have we told you that mustard doesn’t go well only with bolliti? Countless times, we know! Probably you will also be tired of hearing us saying it, but above all, in this case the italian saying “provare per credere” (“seeing is believing”) could not fit better!

HOW TO PREPARE THE WAFFLE

Weigh the egg whites. The same weight of the egg whites must also be that of butter, sugar and flour.

Melt the butter in bain-marie and let it cool. Meanwhile, beat the egg whites for 5 minutes, adding a spoonful of sugar at a time.

Once the sugar is finished, add the butter slowly, still whipping.

Sift the flour and add it to the mixture just obtained, mixing everything with a spatula.

At this point you can proceed with two types of cooking:

  • with the special waffle iron: heat it well. Place a couple of spoonfuls of the mixture in the center and lower the top of the plate to press the batter.
  • Cook the waffles for at least 2 – 3 minutes; in a hot oven, heated to 200°C: line a baking tray with parchment paper. Spread the batter to create a 10 cm diameter disc. Place in the oven and cook for 5-6 minutes.

As soon as the waffles are golden brown, place them still hot on an upside-down glass and press them with your hands so that they take the cup shape. Let them cool and harden at room temperature.

Once the waffles have hardened, turn them upside down and serve the scoops of ice cream inside them.

The simple taste of ice cream is completed with the sweet but spicy blackberry mustard, becoming something so surprising and delicious that once you try it you won’t be able to do without it.

NB: You can keep the pods for a couple of days in an airtight container.
